A rich and chocolatey cookie with a hint of umami and depth from browned butter.
These cookies loosely follow a Butternut Bakery recipe. Browning the butter
before mixing in the miso and sugars gives the cookies a deep, caramel-like flavor. We doubled the amount of
miso to amp up the umami notes that balances the sweetness.
Using a roughly chopped dark chocolate bar lead to a more intersting texture and enjoyable eating experience.
This recipe is still delicious when gluten free flour is substituted for regular flour.
Made about 12 cookies for a midweek treat.
